Paomo is the Chinese meaning pita bread being soaked. Pork Chitterlings Paomo means pita bread soaked in pork chitterlings soup. Locals in Xian call this snack Hulutou (gourd head). Hulutou has been the signature food of Xian for over 1300 years. It is said that one day in 611, Sun Simao who is well-known as the God of Chinese Herbal Medicine was wandering on the streets of Changan, he went to a restaurant selling cooked pig chitterlings and noticed that the taste was a bit strange. He took some herbs from a gourd that he was carrying and gave the herbs to the cook. Chitterlings cooked with the herbs became a great success. To attract more customers, the owner of the restaurant put up a huge gourd in front of his restaurant, telling people that his pig chitterlings were cooked with secret recipe from the God of Chinese Herbal Medicine, Sun Simiao, and named his restaurant Gourd Head Restaurant. Since then, pig chitterlings had been called gourd head in Chang'an and Gourd Head has become the signature food of Xian.
