Drying Houses (Chunche)
Ever wonder how a grape becomes a raisin? The answer lies in a fascinating traditional process. Observation of the process is possible at the site’s traditional drying houses, known as “Chunche” – a Uyghur word for these specialized structures. With dark interiors and walls riddled with holes, these structures are designed to allow a constant flow of wind, accelerating the drying through evaporation. Interestingly, the shade provided by the chunche results in green or yellow raisins, while sun-drying produces darker varieties.
