If one dish could represent Xi'an, locals would tell you it'd be without doubt Beef & Lamb Paomo. Paomo is a specialty of Shaanxi cuisine and is a typical food eaten in the city of Xi'an. It is a hot stew of chopped-up baked flatbread (known as mo in Chinese), cooked in lamb broth and served with lamb or beef. Paomo restaurants in Xian normally serve both Lamb Paomo (Yangrou Paomo) and Beef Paomo (Niurou Paomo). Local people prefer to order two pieces of flatbread and tear the bread into pieces as small as soybeans by hand.
